What you will need:
- Apples, washed and chopped or cut into thin slices. (If you want faster results, place them all in a food processor or blender and grind it nicely.)
- You will need a little sugar, if you don’t use sweet apples. The amount to use is 1% sugar of the amount of apples. (It will be necessary to start the fermentation, and it completely disappears in the course of obtaining apple cider vinegar.)
- Water
- Large glass jar
- Gauze to cover the jar
Preparation:
First you need to chop the apples, and put them in the large jar, then add a little sugar, pour water and cover with the gauze, leave in a quiet place with a stable temperature of about 20 degrees Celsius (68 Fahrenheit).
After seven to ten days you will start to smell vinegar in the room in which you stored it. It will be very strong so you won’t be able to store the mixture in your kitchen or anywhere in the apartment, it will have to be a basement or some other utility room.
When a month passes by you can start testing. Make sure it is strong enough for you. If it suites you, strain the mixture and pour the vinegar into sterilized bottles.
